Asda Meat Up

And just like that, the warm weather has bid us farewell for another year — but it’s always fun to reminisce, isn’t it?

One of the best things about summer is a good ol’ British BBQ, and I was lucky enough to be invited along to the ultimate BBQ MEAT up (their pun, not mine) hosted by Asda a few weeks back, all in aid of National Burger Day.DSC02876Our adventure began on The Big Lemon (that familiar smell of chip fat brought back SO many uni memories for me — refusing to board the N25 in favour of this eco-friendly counterpart.) The bus dropped us off at a very fabulous house in a mystery location (where even were we, guys?! One of the ‘deans, I believe…) where we were greeted by a mouth-watering menu, some skillful BBQ pros and a stunning live jazz band.

Oh and some kick-ass gin & elderflower and Pimms, adding a little sunshine to the drizzly evening.

As you can see from the menu above, there was all sorts of deliciousness on offer, making it particularly tricky to decide what to eat. In the end, I opted for the salmon and cucumber yoghurt which was delightful. Salmon on National Burger Day — I’ve always been a bit of a rebel.

DSC02900Here’s the salmon recipe in case you fancy trying this for yourself:

Ingredients

Salmon

1 lemon

Olive oil

Sea salt
 & black pepper

1 cucumber

1 red chilli, de-seeded and finely chopped

300ml natural yoghurt

Mint, finely chopped

Method

1. Season the salmon with lemon, olive oil, sea salt and black pepper.

2. Cut the cucumber in half lengthways, remove and discard the seeds. Chop it up and mix in a bowl with the yoghurt. Add lemon juice, half the chilli and half the chopped mint, season with salt and pepper.

3. Barbecue the fish until cooked. Garnish with chilli and mint. Serve with the yoghurt.

Mmmm I could eat this again right now… my stir fry didn’t quite cut it tonight. It was such a lovely evening, and a great opportunity to meet fellow Brighton bloggers. Thanks to Asda for feeding and entertaining us!
